My 2019 Vision Board!

Hi all!

I finally got around to finishing my vision board and it’s not the very best, but it’s perfect for me! This time I just put a bunch of pictures/quotes that will motivate me for this year. Last year, I had a lot of pictures of my husband/family and random things, but this way is better.

Here’s my vision board – I won’t go through each one, but I’ll explain some of them.

Let’s start from the top. A lot of those are about calmness and mindfulness which is something I’d love work on a lot this year. The picture of the woman is about me wanting nicer skin and getting better with my makeup skills. And of course I added something about my husband because he is #1 🙂 As you can see there are a couple things on here about him! 

In the second row, I have a picture of the Kindle which explains me wanting to read more this year. I can happily say that I have read SO much since I have gotten it! Family of course is important so I had to add something about that in here! We are planning to go to NYC this summer, so I added a picture of Central Park in there. And the last one I will mention in this row is the quote, “No one is born a great cook, one learns by doing.” I often get discouraged when I attempt to make some food that I’ve never made before or sometimes even food I’ve made multiple times and it doesn’t turn out the way I thought it would. This is a great quote because it’s true, I will get better with time! 

The third row is just all quotes, so I’ll pick 2-3 that stand out right now. I really want to get rid of any clutter and just make our living space very simple. The picture with Pooh says, “sometimes the smallest things take up the most room in your heart.” This is referring to my niece and nephew 🙂 And the last one I will mention in this row is the very first quote, life really is precious.

In the fourth row, I have the state of California map because it is one of the best states in my opinion and this map shows a lot of cool places to visit in CA! The woman in the bikini is my fitness goal and it’s very realistic for my body type since I don’t want abs or anything muscular. I feel like I could achieve this in 2019. I used to find really fit people with abs and make them my motivation, but it was too unrealistic and would take YEARS to happen. The picture of the palm trees and beach is a very special place in my heart 🙂 ❤ And the last one is about working out, eating well, and being patient. I’m not patient enough and this is a good reminder to be!

And for the last two sections, I’ll just talk about 4-5 of them. I added a couple things about traveling because that’s what I’m most looking forward this year and there is a picture in Disney Land because we are planning to go there! The pictures are because I want to take lots and lots of pictures going forward, that is the best way to remember good memories. I NEED to drink more water daily, it’s a huge struggle for me, but I am going to make it a habit. The picture of the hair is because I want long, healthy hair. And the last one I will mention is the plant, I want more plants in my house because plants give off good energy and fresh air.

There you have it, my 2019 vision board! I tried to be as realistic as possible and I think I can for sure accomplish most, if not all of these goals on my board.

Friday!!!

Hello all!

Happy Friday and Happy 3-day weekend for most of us! This 3-day is so much needed so I am super excited to be done with work soon and to start it already! 🙂 Work has been stressful and it got even more stressful today, so I am trying my best to stay calm and collected lol. I really wish I could do blogging/videos for a job, life would be so much better. Writing and creating stuff just lifts my mood and makes me feel great. 

After work today, I have to go look for 2 dresses to wear to 2 events this weekend, a bridal shower and a wedding. I have another wedding to go to next weekend, think I might just wear a jumpsuit to that one (if it fits lol) so we have some shopping to do today.

I think tonight we’ll go out to a fancy dinner. We have been watching Master Chef since yesterday and have not been able to stop watching it, IT’S SO GOOD. Chef Gordan Ramsey is a BEASTTTTT. This show makes us so motivated to make good food so we’re excited to do this during keto and also after!

So Spotify just made this thing that if you have their premium or student account, you get Hulu AND Showtime for free included within the price of Spotify. Which is AWESOME because Hulu is great and we’ve never had Showtime and I know they have a bunch of great content. Binge watching here I come!!!! 🙂 Shoutout to Spotify!

I am going to make another post probably right after this, I didn’t make one when I said I would the other day and I was disappointed in myself. I really want to make a set schedule of when to blog and not just when I am working from home. Maybe every other day or something, it would just be at different hours. But for sure I got something for today 🙂

So my school is like taking away my free subscription for Adobe through them 😦 so I am going to have to find another alternative or see how much it is monthly or yearly because I really like their spark app. I wanted to learn photoshop and to also use their video editing app. We’ll see what happens, but I have until September 7th to keep using it!

Self Love Challenge Day 12

Chicken with quinoa and vegetables recipe

Hi!

I made up this recipe a couple of weeks ago so it’s my own recipe which is pretty awesome! So here we go!

So here are all of the ingredients: quinoa (I bought the one from Walmart that you cook in the bag in the microwave for 4 min), 1 and a half cup of mixed vegetables (this has corn, carrots, green beans, and peas), handful of spinach, garlic, 1 cup of heavy whipping cream, and I used 9 chicken tenderloins (they’re really small, forgot to take a picture of the chicken)

Vegetables should be cooked first, brought to a boil and then let it cook for 5-8 minutes

Peel two pieces of garlic like this

Then dice them up to tiny pieces

Next, prepare the chicken. Cut them up into little pieces like this and then season it

Heat up a pan and let the chicken cook for a bit, I added water to mine so it was softer and didn’t burn as quick while waiting for the other food

Next, add that garlic into a pan with oil (I use olive, any kind works)

After the garlic changes color a bit, add in the spinach

Let the spinach cook for a minute or two (it cooks super fast)

Add in 1 cup of heavy whipping cream, stir

Add in the chicken, and vegetables you drained, and then mix it all

Add in the quinoa and let it cook for another 1-2 minutes
